Oh sweet, alluring Santorini… an island that is so special and unique in many ways, is the home to some rare produce that cannot be found anywhere else on Earth. One of these exclusive fruits is the white eggplant, which is quite large in size and has a savory sweet taste.


It is the second most famous kind of eggplant (after the purple one) in Greece and you can only find it on Santorini. These aubergines grow on Santorini because of its rich volcanic soil and warm climate. Plus, this tasty treat has little to no seeds and does not absorb oil, which makes it easier to cook and is the perfect snack for ouzo or wine. The volcanic soil gives this eggplant such a surprisingly sweet taste that there is no need to do anything to take the bitterness out.
